I haven’t shared any sweets in a while – so it’s time to change that! As many of you who’re my dear friends (followers is a weird word; I see you each of you as a special friend :)) on Instagram know; I’m a huge ice-cream fan. I eat it for breakfast, lunch and dinner when I feel like it.
I’m also a huge coffee fan, there’s nothing more satisfying than a sip of hot coffee early in the morning. And that smell. Just like love.
Although I usually prefer quickly dropping in a few ingredients for a delicious nice-cream, sometimes we all need something fancier. That’s where my ice-cream maker has a chance to shine!
Not to worry, if you don’t have ice-cream maker, you can do just fine with food processor! All you need to do is freeze most of your mixture in ice cube trays and later on blend it with a food processor. Easy peasy.
Coffee is one of those foods people just can’t agree on (when I think a bit better, people can hardly agree on anything :)). Some believe it should be avoided at all cost, while others wouldn’t wanna start a day without it.
What I think is – we’re all unique; as with all other foods, some of us can handle coffee well, while with others it might not be the case.
Moderate amounts of coffee are shown to be beneficial for the mental health (1). Another super interesting study found that four cups of coffee a day have positive effect of the heart, lowering the risk of heart attack & even diabetes type 2 (2)
Therefore, I’m going to enjoy my morning cup or two – and if you know that your body handles coffee well, you may continue enjoying it too.

Magical ingredient in this beautiful ice-cream is coconut milk. I’m obsessed with all things coconut & considering the nutritional value – enjoying coconuts in life is so worth it!
Coconuts provide us lovely fats that keep our hair, skin + nails healthy, our brain happy & have anti-inflammatory properties. Also, lauric acid in coconut has anti-bacterial properites.
Coconuts are also a great source of potassium & magnesium, which means they’ll help us relax muscles & keep our hearts healthy.

As always, feel free to play – if you want to omit coffee, do so. You can add cocoa powder or you can simply enjoy a coconut ice-cream. Perhaps you want to add a bit of fruit puree for a refreshing snack.
Toppings are another great way of combining health & creativity; you can top your ice-cream with shredded coconut or coconut chips, or you can top it with any combination of nuts, seeds, dried fruits, fresh fruits, powders – it’s really up to you. I love shredded coconut, chocolate chunks, chia seeds & all kinds of nuts – especially sliced almonds.
A word of warning – don’t eat too much at once, it really causes brain freeze. I ate once for breakfast a whole cup of ice-cream, couldn’t think straight for hours, my whole head felt frozen. 😀 Keep that in mind when scooping.
COCONUT COFFEE ICE CREAM
Perfect ice-cream for coffee lovers
- 1 banana as ripe as possible
- 1 cup (240ml) coconut milk full fat
- 1/4 cup (50ml) coffee cold
- 2 tbsp coconut sugar or sweetener of your choice
- 3 tbsp shredded coconut
- 1 tbsp coconut oil melted
Add all ingredients in a food processor & combine.
Pour the mixture in a ice-cream maker & follow instructions, OR
Keep 1/2 cup mixture in the fridge & freeze the rest in ice cube trays for a few hours,
Combine frozen cubes with 1/2 cup mixture from the fridge in a food processor, until smooth.
