Ok, I’m gonna pretend it’s December & time for Christmas because I refuse to wait any longer. And the decorations appeared around the city, so it’s totally legit.
I’m currently visiting my hometown & it’s been so much fun – I am yet to figure out how to force myself to travel back home.
Friends, so many people everywhere, all the familiar places AND the Christmas vibes – it’s gonna be a tough decision to pack my crap & enter that plane.
Anyways, we’re not here to discuss my first world problems, we’re here to talk coconut macaroons – and boy are they amazing!!
They’re all the usual;
- extremely simple
- low maintance
- incredibly delicious
- super healthy
- perfect for Christmas
- soooooooo soft!
You’re gonna love them SO MUCH!!
And, who would have ever thought that enjoying something so delicious would bring a glow to our skin, hair, nails & put our brain on fire?! I know right!! And coconut does all of that – it’s so freakin’ awesome! Potassium & magnesium in coconut are gonna make sure our hearts & muscles stay happy, and the fiber is going to feed our beautiful gut microbe.
Need omre persuasion to make these babies? Didn’t think so! 🙂
But, coconut is not where the magic stops – we’re also using almonds. They’re absolutely fabulous – starting with their vitamin E content (coconut will also give us ons of vitamin E), which is a super powerful antioxidant. Almonds are so good that just a handful gives us almost 40% daily vitamin E needs. How cool’s that??
They’re also packed with monounsaturated fatty acids, which are the ones we wanna consume for our heart health. Just as coconut, almonds are gonna provide us with magnesium, as well as manganese.
Almonds are a great antioxidant source – and consuming as many antioxidants as possible is one of greatest things you can do for your health.
Egg whites will add protein to the mix, which is amazing because proteins are our bodies building blocks, they’re essential for.. being alive – and it so happens that egg whites contain the best quality proteins!
Make sure to get your eggs from happy chickens that spend their days the way chicken should spend its day – these kind of eggs always have better nutritional profile because they’re natural. And nature knows the best.
Last but not least, we will use honey to add a bit of sweetness to our delicious macaroons. The darker the honey, the more antioxidants it contains. Honey is my favorite sweetener, because of the high antioxidant profile, enzymes it contains – and it contains a bit of vitamins + minerals.
Make sure to use high quality, raw honey.
It’s great for our cholesterol levels, healthy blood pressure, heart health.
As for the “frosting”, simply use melted chocolate. If you ever heard or saw me, you know how much I LOVE chocolate – because it’s one of the healthiest foods ever. Therefore, use as much of it as you want! Hell, dip the whole thing in it!
Of course, use high quality dark chocolate – that’s the kind that’s gonna help you live your best life as long as humanly possible.
Simple, delicious.. contain coconut - what else we do really need?
- 3 1/3 cups (200g) shredded coconut
- 2/3 cups (80g) ground almonds
- 3 egg whites
- 1-2 tbsp honey to taste
- ca. 1/2 cup (90g) dark, high quality, chocolate
Preheat the oven to 160C/320F
In a bowl, combine shredded coconut & ground almonds.
In the other bowl, beat the egg whites with a handmixer till firm & fluffy. Add honey, just to combine.
Add the coconut + almonds mixture to the egg whites mixture to combine.
Form the macaroons with tablespoon & hands, place them in the
Bake for ca. 15mins - check them; they need to be done, but still mostly white. Carefully, because hey burn easily.
Melt the chocolate in a sauce pan & decorate the macaroons.
