I don’t need to tell you how delicious it is, but I will tell you I MAY prefer these babies over actual pizza.
They’re also perfect for movie nights or when you’re having people over for a little party. Children also love them.
One more awesome thing about these is – they’re whole grain, so if you’re looking into upleveling your nourishment game, what better way to nourish yourself than with pizza?!

Here’s a bit info on specific ingredients that will make your decision to make these easier if you aren’t running to the kitchen already;
Tomato sauce will provide us with beta-carotene & loads of lycopene – this is an important antioxidant. Tomato sauce provides us also with vitamin K, and vitamin C – although vitamin C is sensitive to heat, so.. don’t rely on cooked tomatoes to provide you with your daily needs. It also contains potassium, manganese & fiber.
Cheese will boost our protein intake & give us B12 vitamin, which we can ONLY get from animal products. Cheese will also give us some minerals, like zinc, phosphorus & magnesium.
However, if you’re having hormonal issues that you’ve noticed are connected to dairy, you may want to try different alternatives.

White button mushrooms will add more B vitamins to the mix, as well as selenium, potassium, copper, phosphorus. They also may contain a bit of vitamin D, but I wouldn’t really rely on them as my only vitamin D source – they need to be exposed sun or UV light while growing to create vitamin D.
We’ll also be using whole grain spelt flour; it’s one of my favorite grains. It’s rich in fiber, iron, phosphorus, copper & magnesium. It also contains essential amino acids & healthy fatty acids.
WHY YOU SHOULD TRY IT:
– Whole grain spelt flour: fiber, iron, phosphorus, copper, magnesium, essential amino acids & healthy fatty acids
– Tomatoes: lycopene, vitamins C + K, folate, potassium, beta carotene & flavonoids.
– Olive oil: vitamin E, healthy fats
– White button mushrooms: B vitamins, selenium, potassium, copper, phosphorus
Whole grain Pizza quesadilla
Whole grain pizza quesadilla
- ca. 3 cups (400g) whole grain spelt flour + more for rolling
- 1/2 tsp baking powder
- ca. 7/8 cups (220ml) water
- 5 tbsp olive oil
- ca. 1/2 cup (100ml) tomato sauce
- ca. 1 1/2 cup (150-200g) shredded cheese
- 3-4 mushrooms sliced
- oregano/other herbs
In a bowl, combine flour, baking powder and salt. Add water and olive oil.
Make a dough (knead or hand mixer – I prefer kneading) – it needs to be firm, smooth ball.
Let it rest for 20mins.
Make 8-10 balls out od dough.
Heat a non-stick pancake (crepes) pan on high heat.
Flour the kitchen surface and flatten piece by piece with a rolling pin, as thin as you can.
Put tortilla on the pan, add 2-3 teaspoons of tomato sauce and spread it over half of the tortilla.
Add small handful of cheese, 3-4 slices of mushrooms and oregano or herbs you're using.
Flip other half of tortilla over the top, let it cook for minute or less (depending on the heat), turn the quesadilla over and cook for 30 more seconds.
Repeat the process till you're done with dough.
Serve hot and enjoy!
