SUMMER LENTIL SALAD WITH FETA CHEESE

Ingredients

  • 2 cups (400g) brown lentils cooked (or canned)
  • 1 1/2 cup (ca 200g) Feta cheese cubed
  • 1-2 tomatoes chopped
  • 1-2 eggs cooked and chopped
  • 1 red onion chopped
  • 2-3 tbsp olive oil or to taste
  • 1/2 lemon, juice
  • dill to taste
  • salt & pepper

Instructions

  1. Simply prepare all the ingredients, combine them in a bowl, gently stir your salad.

  2. Enjoy cold!
