Whole grain pizza quesadilla

  • ca. 3 cups (400g) whole grain spelt flour + more for rolling
  • salt
  • 1/2 tsp baking powder
  • ca. 7/8 cups (220ml) water
  • 5 tbsp olive oil
  • ca. 1/2 cup (100ml) tomato sauce
  • ca. 1 1/2 cup (150-200g) shredded cheese
  • 3-4 mushrooms sliced
  • oregano/other herbs


  1. In a bowl, combine flour, baking powder and salt. Add water and olive oil.

  2. Make a dough (knead or hand mixer - I prefer kneading) - it needs to be firm, smooth ball.

    Let it rest for 20mins.

  3. Make 8-10 balls out od dough.

  4. Heat a non-stick pancake (crepes) pan on high heat.

  5. Flour the kitchen surface and flatten piece by piece with a rolling pin, as thin as you can.

  6. Put tortilla on the pan, add 2-3 teaspoons of tomato sauce and spread it over half of the tortilla.

    Add small handful of cheese, 3-4 slices of mushrooms and oregano or herbs you're using.

  7. Flip other half of tortilla over the top, let it cook for minute or less (depending on the heat), turn the quesadilla over and cook for 30 more seconds.

  8. Repeat the process till you're done with dough.

  9. Serve hot and enjoy!
